Instructions

    Combine all ingredients and mix until a shaggy dough forms.

    Knead 8-10 minutes until smooth. The dough should be slightly tacky.

    Rise covered for 1.5-2 hours until doubled.

    Shape into a boule or batard on a floured surface.

    Place on parchment-lined baking sheet or in a banneton. Rise 45-60 minutes.

    Preheat oven to 475°F (245°C) with a Dutch oven or baking stone inside.

    Score the top and bake in the Dutch oven covered for 25 minutes.
