Yeast Types Explained

Instant Yeast (Rapid Rise, Bread Machine Yeast)

Fine granules that can be mixed directly with dry ingredients. Works faster than active dry yeast. Common brands: SAF Instant, Fleischmann's RapidRise.

Active Dry Yeast

Larger granules that traditionally need to be dissolved in warm water (105-110°F) before use, though modern versions can be mixed directly. Takes slightly longer to rise than instant.

Fresh Yeast (Cake Yeast, Compressed Yeast)

Moist, perishable yeast sold in blocks. Must be refrigerated and used within 2 weeks. Preferred by some professional bakers for its flavor. Crumble into liquids before mixing.

Tips for Using Yeast

  • Storage: Keep instant and active dry yeast in the freezer for longest shelf life (up to 2 years). Fresh yeast must be refrigerated and used within 2 weeks.
  • Testing: To test if yeast is alive, dissolve in warm water with a pinch of sugar. It should foam within 10 minutes.
  • Temperature: Yeast is killed above 140°F (60°C). Use water between 95-110°F (35-43°C) for optimal activity.
  • Salt: Don't let yeast come in direct contact with salt, as salt inhibits yeast activity.
